Wine pairing at The Burgundy is not about following textbook rules (white with fish, red with meat). It is about understanding the specific flavours, textures, and emotions of each course and finding a wine that either harmonises or creates productive tension.

Consider our confit duck with jollof-fried bulgur. A textbook pairing might suggest a Pinot Noir. Our sommelier might instead reach for a South African Syrah with smoky notes that echo the jollof spice, or a Moroccan red with enough tannin to cut through the duck fat. The choice depends on the specific dish, the specific vintage, and the story the evening is telling.

The African Wine Cellar

Our cellar holds up to 1,000 bottles, and the majority come from African vineyards. This is a deliberate choice that aligns with The Burgundy's Pan-African philosophy. Our sommelier is not just a wine expert — they are an ambassador for African winemaking.

They can tell you about the volcanic soils of the Cape Winelands, the high-altitude vineyards of Ethiopia, the ancient traditions of Moroccan viticulture. Every recommendation comes with context — where the wine is from, who made it, and why it matters.

Beyond dinner pairings, our sommelier hosts dedicated tasting experiences:

Taste of African Wine Selection: Five wines from across the continent, each paired with artisan cheese and bites. This is an education as much as an indulgence.

Wines of the World: For comparison — five international wines that help guests understand where African wines sit in the global landscape (spoiler: they stand tall).

Single Malt Whiskey Tasting: Five carefully selected single malts, paired with complementary bites. For guests who prefer grain to grape.

Blended Whiskey Tasting: An exploration of the art of blending — five whiskeys that demonstrate how complexity is built from harmony.
